It is Soup weather and Honig Dutch Soup Mixes are easy and delicious!

Brrrrr...  It is so cold here in the PNW- and it is snowing, hailing and raining at the same time.  It's the way we roll up here.  We are also continuing to roll with the soup posts because we will be having a soup tasting soon.  Today I am featuring two hearty soup mixes from Honig, Holland.  The first is Brown Bean Soup which is delicious on its own or with added sausage slices.

Honig Brown Bean Soup Mix
Honig Brown Bean Soup- One package soup mix, 6 cups cool water, 1 dutch style sausage, 1 medium onion, chopped. Combine Brown Bean Soup Mix with 6 cups of water in a medium pan. Bring to a boil. Add chopped onions (optional). Reduce heat and simmer for 20 minutes. Add sliced sausage. Simmer an additional 10 minutes. Serve with whole wheat buns. Serves 6. Ingredients: Yeast extract, wheat flour, dehydrated vegetables (tomato, carrot, onions,leek celery), brown beans, wheat flour, potato starch, salt, partially hydrogenated palm oil, skimmed milk powder, herbs, spices, artificial flavor and color, citric acid powder, pepper, pimento, laurel, clove, cayenne, color 150c, citric acid (lemon).





Honig French Mushroom Soup Mix
 If you would like a soup that is a little lighter we have the Honig French Mushroom Soup Mix.  This delightful soup is seasoned with mace, bay leaf and clove so it is unlike any American Mushroom soup that I have had. 

Honig French Mushroom Soup is a delicious, creamy soup filled with delicious pieces of mushroom. The lightly seasoned soup tasts like homemade, adding 150g of freshly sliced mushrooms will add even more flavor.  1.Put 1.5 liters of cold water in a saucepan and while stirring with a whisk, add packet contents. 2.Keep stirring the soup and bring to a boil, then put the lid on the pan (not completely closed). 3.With occasional stirring, let the soup simmer 10 minutes.  Product of Honig, Holland 3.2oz=6 servings.

Pumpernickel sandwich with Jarlsberg and peppers Recipe

This is a super easy yet elegant recipe for a quick meal or snack.  Pumpernickel Rye is extremely healthy due to its high fiber and calcium content.  I like its hearty nutty flavor contrasted with the smooth sweetness of cheese.  Pumpernickel is also nice with Peanut Butter!  You could substitute any cheese  for this quick bite, even an herb butter spread with tomato is fun and easy.

Number of servings: 4   Ingredients:
8 slices pumpernickel bread
 2 peppers 






Duration   30 min  Difficulty Easy
How- In the oven at 400 degrees for approx. 15 minutes.
Cut peppers in half and remove seeds. Oil the skin side and place them on a baking tray with the skin side up. Cook until wilted and skin blisters.  Remove the skin and allow the peppers to cool.
 Take a slice of pumpernickel bread, followed by an equally thick slice of Jarlsberg, a slice of bell pepper, a slice of Jarlsberg and finally a slice of pumpernickel.

Lagunaitas Olde GnarlyWine

2011 Bomber: Very nice copper pour with fluffy tan head. The kind of head that dimples in the center. Sweet malty aroma, with hints of orange, figs, & peaches. No really. Mouthfeel is superb. Viscous, sticky, smooth, and lingering. Flavors of fruit including raisinS, orange, sweetness of candi sugar, very well balanced hops, caramel, hint of alcohol and wood. I am amazed at the malt character in a fairly high-hopped brew. Tasted @ 62F.

Norwegian Curry Tuna Salad Recipe with curry and cumin spiced Nokkel ost Cheese

This is a tasty salad that I threw together in about 6 minutes.  I love tuna salad and this is a nice change from my usual pickle mixture.

Norwegian Tuna Salad
1 cup curd ,quark,  Light Sour cream or crème fraîche
1 can tuna in oil drained
1 finely chopped red onion

1/2 c cubed cheese, Norvegia or Nokkel Ost
1 apple in small cubes
1 teaspoon curry
¼ teaspoon salt


Norwegian Tuna Salad Recipe
An interesting salad that can be used in a sandwich or a stand alone low carb meal.

Tips: Can spice up with chopped chilli and fresh coriander for taste

How- Drain Tuna. Cut the apple into small pieces and finely chop the onion. Mix the tuna, red onion, apple, quark / sour cream or crème fraîche and curry. Season with salt. Good  smeared on lefse or alone.

Tine brand Nokkelost cheese from Norway

Purchase TINE Nokkelost here, it is one of the most popular cheeses in Norway. It is a 45% fat cheese so it is very creamy. The addition of cumin and cloves spread throughout the cheese take it to a level of brilliance that make it addictive. It is great as a snack and makes an over the top grilled cheese sandwich.

Years ago when trade between countries was paid for in goods Norway accepted Leiden cheese from Holland in exchange for Norwegian timber. When this practice stopped Norwegian palates raised their voices until Tine began producing a similar, but higher fat content cheese that is today's Nokkelost.
Nokkelost in fact translates as 'Key Cheese" which is the symbol on the gates of the city of Leiden in Holland where that cheese is made.
I prefer the Leiden cheese, perhaps it's my Dutch genetics, but it is dryer and more aged tasting so the seeds impact a stronger flavor,
This cheese is extreamly rare in the States. There is a Washington State dairy that makes a version which is good but very different from the Tine brand. Blind Cow also makes another Norwegian version that is more like Leiden.

Chana dal, Natures Low Glycemic Carbohydrate Beans

 Ok- so you have been reading about chana dal and it's amazing nutritional bounty and attributes as a low glycemic carbohydrate.  So what exactly is this Chana Dal?  Well it is split Chickpeas without the seedcoat ( the floaty wrapper that comes off when you soak them).  Chana dal is produced by removing the outer layer of Kala chana (black chickpeas) and then splitting the kernel.

So the search is on, where can you  buy Chana Dal Or Chana Daal  ?  And when I do get some how do I cook it?  Preparing dal -Most dal recipes are quite simple to prepare. The standard preparation of dal begins with boiling a variety of dal (or a mix) in water with some turmeric, salt to taste, and then adding a tadka (also known as tarka, chaunk or baghaar) at the end of the cooking process.



Tadka or tarka (also known as thalimpu or chaunk or baghar or vaghar) consists of various spices or other flavorings fried in a small amount of oil. The ingredients in the tadka for each variety of dal vary by region and individual tastes, but common tadka combinations include cumin, chilli powder [cayenne powder], and onion or mustard seeds and garlic. In some recipes, ginger, tamarind, unripe mango, purslane, or other ingredients are added while cooking the dal, often to impart a sour flavor. Some preparations also call for mashing the cooked dal a bit with a hand masher or suitable rolling pin.

Norsland Lefse Ham rolls

Ingredients:

2 Norsland Lefse Sheets
Filling:
1 Package Tine Snofrisk spreadable goat Cheese
6 slices ham
1 cup chopped herbs

Duration  10 min     Difficulty  Easy -

Norsland Lefsa Sandwich roll
Spread cheese onto Lefse. Add slices of ham on top. Sprinkle with herbs and roll. Cut into pieces and serve, preferably with a toothpick. Or substitute slices of smoked salmon and sprinkle with chopped dill. Number of servings: 4

Tine Ridder Ost Cheese Soup and Two Norvegia Ost Norwegian Sandwich Recipes

Ridder Cheese Soup

4 servings
2 tablespoons Butter
2 tablespoons flour
1 liter vegetable stock
1 cup grated Ridder Cheese
1 cup cream
1 egg yolk
1 cup chopped parsley or other green leaf

How- Peel and finely chop the onion. Sauté the soft butter without it taking color. Sprinkle on the flour and stir. Gradually add broth and let the soup boil for 5 minutes

Mix together the grated cheese, cream and egg yolk and stir into the soup. Let it melt while stirring and allow the soup to be hot, but do not let it boil. Season with salt and freshly ground pepper.

Sprinkle with some grated Ridder and chopped parsley or other green. Serve the soup with fresh bread.

Open Face Norvegia Cheese Sandwich with Tomato Basil Salad
Number of servings: 1







Ingredients
1 sliced bread, preferably French bread
1 egg yolk
1 teaspoon mustard
4 slices Norvegia
3 cherry tomatoes
1 tablespoon finely chopped fresh basil
1 tablespoon olive oil
Duration  15 min   Difficulty  Easy
Slice or cut into strips Norvegia. Mix cheese, egg yolk and mustard. Put the mixture on a slice of bread. Bake in the oven, preferably under the grill at 175 degrees, 3-5 minutes, until cheese melts.
Mix split cherry tomatoes and chopped basil with oil and put it on the bread before serving.


Norwegian Norvegia Ost Sandwich

Sandwich with caramelized onions and bacon

Number of servings: 4
Ingredients
8 slices good bread
2 tablespoons Butter
1 onion
1 teaspoon sugar
½ teaspoon vinegar
8 slices Norvegia
8 slices bacon
1 pear

Duration  15 min            Difficulty Easy
Melt the butter in a frying pan on low heat and add onion slices, sugar and vinegar. Cook, stirring, until caramelized, about 30-40 minutes. Take from the plate and let cool.
Heat a frying pan or toaster / sandwich iron on medium heat.
Put some mustard on 4 of the slices. Add Norvegia in slices, pear slices, fried bacon and then a slice Norvegia at the top. Put some butter on the top lid, turn gently and apply a little less well. Add to pan and cook.
